Ingredients: 1 pre-baked 9-inch (23 cm) pie crust, 1 cup (200 g) granulated sugar, 2 tbsp all-purpose flour, 3 tbsp cornstarch, ¼ tsp salt, 1½ cups (360 ml) water, 2 lemons, juiced and zested, 2 tbsp unsalted butter, 4 large egg yolks, beaten, 4 large egg whites, 6 tbsp granulated sugar (for meringue).
How to Make: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Gradually stir in water, lemon juice, and lemon zest. Cook over medium heat, stirring frequently, until mixture comes to a boil and thickens. Remove from heat and stir in butter. Slowly whisk a small amount of the hot mixture into the beaten egg yolks, then return all to the saucepan and cook 2 more minutes. Pour filling into the pre-baked pie crust.
For the meringue, beat egg whites until soft peaks form. Gradually add 6 tablespoons sugar, beating until stiff peaks form. Spread meringue over hot lemon filling, sealing edges to the crust. Bake at 350°F (175°C) for 10–12 minutes, until meringue is golden. Cool completely before slicing and serving for a perfectly balanced, tangy-sweet pie!
