Savory Wok-Seared Beef Strips with Caramelized Onions in Rich Oyster Glaze

Ingredients:

500 g beef sirloin or flank steak, thinly sliced against the grain
2 large onions, sliced into wedges
2 cloves garlic, minced
1 tbsp fresh ginger, finely grated
3 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp dark soy sauce (for color, optional)
1 tsp sugar
1/2 tsp black pepper
1 tbsp cornflour
2 tbsp water
2 tbsp vegetable oil
1 tsp sesame oil
1 spring onion, sliced (for garnish)

Directions:

In a bowl, combine sliced beef with cornflour, soy sauce, and a splash of water. Mix well and let marinate for 10–15 minutes.
Heat 1 tablespoon of oil in a wok or large frying pan over high heat. Add the beef in a single layer and sear for 1–2 minutes until browned but not fully cooked. Remove and set aside.
In the same pan, add remaining oil. Toss in onions and stir-fry for 3–4 minutes until slightly softened and lightly caramelized.
Add garlic and ginger, stir-fry for 30 seconds until fragrant.
Return the beef to the pan. Add oyster sauce, dark soy sauce (if using), sugar, and black pepper. Stir well to coat everything evenly.
Pour in 2 tablespoons of water and cook for another 2–3 minutes until the sauce thickens and clings to the beef and onions.
Drizzle sesame oil over the stir-fry and give it a final toss.
Remove from heat and garnish with fresh spring onions. Serve immediately over steamed rice.
