Peanut Butter Balls

🧾 Ingredients

  • 1 cup creamy peanut butter
  • 4 tbsp unsalted butter (softened)
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • 2 cups chocolate chips 🍫
  • 1 tbsp coconut oil or shortening (optional, for smooth melting)

1. Make the Filling

  1. In a bowl, mix peanut butter, softened butter, and vanilla.
  2. Gradually add powdered sugar until a soft dough forms.

2. Shape

  • Roll into small balls (about 1 inch).
  • Place on a lined tray.
  • Freeze for 20–30 minutes until firm ❄️

3. Melt Chocolate

  • Melt chocolate chips (with coconut oil if using) in microwave or double boiler.
  • Stir until smooth.

4. Dip

  • Dip each peanut butter ball into chocolate.
    👉 Optional: Leave a small top exposed for the classic “buckeye” look

5. Set

  • Place on parchment paper.
  • Let set at room temp or refrigerate until firm.
