Crispy Cheesy Beef & Ranch Taquitos

These Crispy Cheesy Beef & Ranch Taquitos are the perfect combination of crunchy tortillas, seasoned ground beef, and gooey melted cheese. They are incredibly easy to make and are ideal for family dinners, parties, game-day gatherings, or even as a quick snack. The ranch seasoning adds a delicious savory flavor that pairs perfectly with the beef and cheese. Once baked or air-fried until golden brown, these taquitos become irresistibly crispy on the outside while remaining cheesy and flavorful on the inside.

Ingredients

  • 1 pound (450g) ground beef
  • 1 packet (1 oz) ranch seasoning mix
  • 2 cups Fiesta Blend shredded cheese (or Mexican cheese blend)
  • 10–12 small flour tortillas
  • 2 tablespoons water
  • 2 tablespoons canola oil (for brushing or spraying)
  • Optional toppings:
    • Sour cream
    • Salsa
    • Guacamole
    • Chopped cilantro
    • Diced tomatoes
    • Jalapeño slices

Instructions

Step 1: Prepare the Beef Filling

Heat a large skillet over medium heat. Add the ground beef and cook for about 6–8 minutes, breaking it apart with a spatula as it browns. Once fully cooked, drain any excess grease from the pan.

Sprinkle the ranch seasoning mix over the cooked beef and add 2 tablespoons of water. Stir everything together until the seasoning is evenly distributed and the beef is coated with flavor. Cook for another 1–2 minutes, then remove from heat and allow the mixture to cool slightly.

Step 2: Assemble the Taquitos

Warm the tortillas for about 20 seconds in the microwave so they become flexible and easier to roll.

Place approximately 2 tablespoons of seasoned beef in the center of each tortilla. Top the beef with a generous amount of shredded cheese.

Carefully roll each tortilla tightly into a cigar shape and place seam-side down on a baking sheet lined with parchment paper. Continue until all tortillas are filled and rolled.

Step 3: Bake or Air Fry

Oven Method

Preheat your oven to 425°F (220°C).

Brush or lightly spray each taquito with canola oil. Bake for 15–18 minutes, or until the tortillas are golden brown and crispy.

Air Fryer Method

Preheat the air fryer to 400°F (200°C).

Arrange the taquitos in a single layer in the basket. Lightly spray them with oil and cook for 8–10 minutes, turning halfway through cooking, until crispy and golden.

Step 4: Serve

Allow the taquitos to cool for a few minutes before serving. The cheese inside will be hot and melted. Serve with sour cream, salsa, guacamole, or your favorite dipping sauces.

Tips for Success

  • Use freshly shredded cheese for the best melting texture.
  • Do not overfill the tortillas, as this can cause them to burst while cooking.
  • For extra flavor, add diced onions or chopped green chilies to the beef mixture.
  • Leftover taquitos can be stored in an airtight container in the refrigerator for up to 3 days and reheated in an air fryer or oven to maintain their crispiness.

These Crispy Cheesy Beef & Ranch Taquitos are crunchy, cheesy, and packed with savory ranch-seasoned beef in every bite. They are guaranteed to become a family favorite and will disappear quickly whenever you serve them! 🌮🧀🥩✨
