Classic Chicken Pot Pie

Ingredients

For the Filling

  • 2 cups cooked chicken breast, diced
  • 1 cup carrots, sliced
  • 1 cup frozen peas
  • 1/2 cup celery, diced
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 small onion, finely chopped
  • 2 cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme

For the Crust

  • 2 refrigerated pie crusts (or homemade)
  • 1 egg, beaten (for egg wash)

Instructions

Step 1: Prepare the Vegetables

In a large skillet over medium heat, melt the butter. Add the onion, carrots, and celery. Cook for about 5 minutes until softened.

Step 2: Make the Cream Sauce

Sprinkle the flour over the vegetables and stir continuously for 1 minute. Slowly whisk in the chicken broth and milk. Continue stirring until the mixture thickens into a creamy sauce.

Step 3: Add Chicken and Peas

Stir in the cooked chicken, peas, salt, pepper, garlic powder, and thyme. Simmer for 3–4 minutes, then remove from heat.

Step 4: Assemble the Pie

Preheat the oven to 425°F (220°C).

Place one pie crust into a 9-inch pie dish. Spoon the chicken mixture into the crust. Cover with the second crust and seal the edges by crimping with a fork. Cut a few small slits in the top crust to allow steam to escape.

Brush the top with beaten egg for a beautiful golden finish.

Step 5: Bake

Bake for 30–35 minutes, or until the crust is golden brown and the filling is bubbling.

If the edges brown too quickly, cover them loosely with aluminum foil.

Step 6: Serve

Allow the pie to rest for 10 minutes before slicing. Serve warm and enjoy the creamy chicken filling beneath the flaky crust.
