8 oz cream cheese, softened
1 cup creamy peanut butter
1 cup powdered sugar
1 cup milk or dark chocolate
1 cup white chocolate
Crushed peanuts
Instructions:
In a large bowl, whisk the soften cream cheese and peanut butter until smooth and well combined. Add powdered sugar and mix until a thick dough is formed. At this point, chill the mixture for about 2 hours.
Once chilled scoop the dough into balls. Using a tablespoon measure, scoop a level tablespoon of the mixture then roll into a ball. Repeat the process until all of the balls are rolled.
Place back the balls in the fridge for at least 10 minutes.
Ways to make peanut butter balls:
1. Peanut butter balls with white and dark chocolates:
Break up milk chocolate into small pieces and place in a small microwave-safe bowl. Heat in the microwave, stirring every 20 seconds, until melted and smooth. Repeat with white chocolate.
Dip each peanut butter ball into the chocolate, alternating between milk and white chocolate, and use a fork to get slowly lift them out. Gently shake off excess chocolate and place on prepared tray.
Drizzle truffles with excess chocolate. Pop in the fridge for 20 minutes to set.
2. Coat with Powdered Sugar:
Roll the chilled peanut butter balls in powdered sugar until well-coated.
3. Crunchy Peanut Butter Balls:
Add-ins: Mix in crushed peanuts in the dough for a crunchy texture.
Coating: Can be left plain or rolled in crushed peanuts.
Store in an airtight container in the fridge for up to a week.
