There’s nothing more comforting than a plate of warm, buttery biscuits topped with creamy, peppery sausage gravy. This classic Southern breakfast is simple to make with everyday ingredients and is perfect for family breakfasts, weekend brunches, or whenever you’re craving hearty comfort food.

Ingredients

For the Homemade Biscuits

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • ¾ cup cold buttermilk
  • 1 tablespoon melted butter (for brushing)

For the Sausage Gravy

  • 1 pound ground breakfast sausage (pork or turkey sausage)
  • 3 tablespoons all-purpose flour
  • 2½ cups whole milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon freshly ground black pepper (or more to taste)
  • ½ teaspoon salt (adjust to taste)

Instructions

Make the Biscuits

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cut the cold butter into the flour mixture using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  4. Pour in the cold buttermilk and gently stir until just combined. Do not overmix.
  5. Turn the dough onto a lightly floured surface and gently pat it into a 1-inch thick rectangle.
  6. Fold the dough over itself 3 or 4 times to create flaky layers.
  7. Cut out biscuits using a biscuit cutter or drinking glass.
  8. Place them on a baking sheet so the sides are touching.
  9. Bake for 12–15 minutes, or until golden brown.
  10. Brush the tops with melted butter immediately after baking.

Make the Sausage Gravy

  1. Cook the sausage in a large skillet over medium heat until browned and fully cooked.
  2. Leave about 2–3 tablespoons of the drippings in the pan.
  3. Sprinkle the flour over the sausage and stir constantly for about 2 minutes.
  4. Slowly whisk in the milk a little at a time to prevent lumps.
  5. Add garlic powder, onion powder, black pepper, and salt.
  6. Simmer for 5–8 minutes, stirring often, until the gravy becomes thick and creamy.
  7. Taste and adjust the seasoning if needed.

To Serve

  • Split each warm biscuit in half.
  • Spoon a generous amount of hot sausage gravy over the top.
  • Sprinkle with extra black pepper if desired.
  • Serve immediately while hot.

Tips

  • Use cold butter for the flakiest biscuits.
  • Freshly ground black pepper gives the gravy the best flavor.
  • If the gravy becomes too thick, stir in a splash of milk.
  • Leftover gravy can be refrigerated for up to 3 days and reheated gently with a little milk.
