Ingredients

For the Beef Stroganoff

  • 2 pounds beef sirloin or stew meat, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup sour cream (room temperature)
  • 2 tablespoons chopped fresh parsley

For the Noodles

  • 12 ounces egg noodles
  • 2 tablespoons butter
  • Pinch of salt

Instructions

  1. Bring a large pot of salted water to a boil. Cook the egg noodles according to the package directions until al dente. Drain and toss with butter. Set aside.
  2. While the noodles cook, heat the olive oil in a large skillet over medium-high heat. Add the beef in batches and sear for 2–3 minutes per side until browned. Remove the beef and set aside.
  3. Reduce the heat to medium. Melt the butter in the same skillet. Add the chopped onion and cook for about 4 minutes until softened.
  4. Stir in the garlic and mushrooms. Cook for another 5–6 minutes until the mushrooms release their moisture and become golden.
  5. Sprinkle the flour over the vegetables and stir constantly for 1 minute.
  6. Slowly pour in the beef broth while whisking to keep the sauce smooth.
  7. Add the Worcestershire sauce, Dijon mustard, paprika, salt, and black pepper. Stir well and bring the sauce to a gentle simmer.
  8. Return the browned beef to the skillet. Cover and simmer for 15–20 minutes, or until the beef is tender.
  9. Reduce the heat to low. Stir in the sour cream until the sauce is smooth and creamy. Do not let the sauce boil after adding the sour cream.
  10. Taste and adjust the seasoning with more salt or pepper if needed.
  11. Serve the creamy beef stroganoff over the warm buttered egg noodles.
  12. Garnish with fresh chopped parsley and serve immediately.

Tips

  • Sirloin cooks quickly, while stew meat benefits from a longer simmer for extra tenderness.
  • For a richer flavor, add a splash of heavy cream along with the sour cream.
  • Fresh mushrooms provide the best texture, but canned mushrooms can be used in a pinch.
  • Leftovers can be refrigerated for up to 3 days and reheated gently over low heat with a splash of beef broth or milk.

Enjoy this rich, creamy Beef Stroganoff with a side of roasted vegetables, garlic bread, or a fresh green salad for a complete and comforting meal.
