🌯 Beef & Potato Burritos
🛒 Ingredients
For the filling:
- 1 lb (450 g) ground beef
- 2 medium potatoes, peeled and diced small
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup shredded cheddar cheese
- ¼ cup beef broth or water
For the burritos:
- 6 large flour tortillas
- ½ cup shredded cheddar or Mexican cheese blend
- Salsa, for serving
- Fresh cilantro, optional
- Sour cream, optional
👩🍳 Instructions
- Cook the potatoes:
Heat the olive oil in a large skillet over medium heat. Add the diced potatoes and cook for about 8–10 minutes, stirring occasionally, until they begin to soften and turn golden. - Add the onion and garlic:
Stir in the chopped onion and cook for 3–4 minutes. Add the minced garlic and cook for another 30 seconds. - Brown the beef:
Add the ground beef to the skillet. Break it apart with a spoon and cook until completely browned and no longer pink, about 6–8 minutes. Drain excess grease if needed. - Season:
Add chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Pour in the beef broth or water and stir well. Let everything simmer for 3–5 minutes, until the potatoes are tender and the filling is flavorful. - Add cheese:
Remove from the heat and stir in the shredded cheese until melted and combined. - Fill the tortillas:
Warm the tortillas briefly so they are easy to fold. Place a generous amount of the beef-and-potato mixture in the center of each tortilla. - Roll:
Fold the sides inward, then roll tightly from the bottom to create a burrito. - Toast the burritos:
Place the burritos seam-side down in a clean skillet over medium heat. Toast for 2–3 minutes per side, until golden brown and lightly crispy. - Serve:
Slice in half and serve hot with salsa, sour cream, and fresh cilantro. 🌶️🥑

For an extra delicious version, add diced jalapeños, black beans, or a little hot sauce to the filling. You can also serve these with guacamole and pico de gallo for a complete Mexican-style meal.
