🛒 Ingredients
🥩 For the Pot Roast
- 3–4 lb (1.4–1.8 kg) beef chuck roast
- 1½ lb (680 g) baby potatoes, halved
- 4 large carrots, peeled and cut into chunks
- 1 large onion, chopped
- 4 cloves garlic, minced
- 3 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
🥔 For the Mashed Potatoes
- 2 lb (900 g) potatoes, peeled and cubed
- 4 tablespoons butter
- ½ cup warm milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
👩🍳 Instructions
1. Season the Beef
Pat the chuck roast completely dry with paper towels. Generously season all sides with salt, black pepper, dried thyme, and dried rosemary. Let it sit for a few minutes while you prepare the pot.
2. Sear the Roast
Heat the olive oil in a large Dutch oven over medium-high heat.
Place the seasoned roast into the hot oil and sear for about 3–4 minutes per side, or until deeply browned on all sides.
Remove the roast from the Dutch oven and set it aside.
3. Sauté the Aromatics
Add the chopped onion to the same Dutch oven and cook for 3–4 minutes, stirring occasionally, until it begins to soften.
Add the minced garlic and tomato paste. Cook for another 1 minute, stirring constantly so the garlic doesn’t burn.
4. Build the Braising Liquid
Pour in the beef broth and Worcestershire sauce.
Use a wooden spoon to scrape the browned bits from the bottom of the Dutch oven. Those browned bits add incredible flavor to the gravy.
Return the seared roast to the pot and add the bay leaves.
5. Slow Cook the Roast
Cover the Dutch oven with a lid and place it in a preheated 325°F (165°C) oven.
Cook for approximately 2½–3½ hours, depending on the size of the roast, until the beef is extremely tender and easily pulls apart with a fork.
6. Add the Potatoes and Carrots
During the final 45–60 minutes of cooking, add the halved baby potatoes and carrot chunks around the roast.
Cover and continue cooking until the vegetables are tender but still hold their shape.
7. Prepare the Mashed Potatoes
While the roast is resting, place the peeled and cubed potatoes in a large pot of salted water.
Bring to a boil and cook for 15–20 minutes, or until the potatoes are completely fork-tender.
Drain them well, then return them to the warm pot.
Add the butter, warm milk, salt, and black pepper. Mash until smooth, creamy, and fluffy.
8. Rest the Beef
Carefully remove the roast from the Dutch oven and place it on a cutting board.
Let it rest for 10–15 minutes before slicing or shredding. This allows the juices to redistribute and helps keep the beef tender and juicy.
9. Serve
Serve generous portions of the tender pot roast with the roasted potatoes, carrots, and creamy mashed potatoes.
Spoon plenty of the rich pan gravy over the beef and mashed potatoes for the ultimate comfort-food experience. 🥩🥔🥕❤️
⭐ Helpful Tips
- Don’t skip the searing step. A deep brown crust creates much more flavor throughout the dish.
- Chuck roast is ideal because the slow cooking process allows the connective tissue to break down, resulting in incredibly tender beef.
- Add the vegetables later rather than at the beginning so they don’t become overly soft.
- For extra-smooth mashed potatoes, use warm milk rather than cold milk.
- Always let the roast rest before cutting into it.
- If the gravy is thinner than you’d like, you can simmer some of the cooking liquid uncovered on the stovetop until it reduces and thickens.
🍽️ Final Result
The finished pot roast should be incredibly tender, rich, and flavorful, with vegetables that have absorbed all those delicious juices from the braising liquid. Paired with buttery mashed potatoes and savory pan gravy, this is the kind of hearty homemade meal that brings everyone to the table.
It’s perfect for Sunday dinner, family gatherings, holidays, or any cold evening when you’re craving something warm and comforting. ❤️🥩🥔🥕
