Crispy Fried Oyster Sandwich

This old-school coastal diner classic completely divides the room every single time. Some call it the ultimate savory crunch, while others absolutely refuse to touch a fried mollusk. Are you eating this or passing hard?

When I first made these crisp fried oyster sandwiches for my family, everyone was a bit hesitant about the idea of fried shellfish tucked inside a soft bun. However, one bite was all it took to make believers out of everyone! The contrast between the crunchy, golden-brown crust and the tender, flavorful oysters is absolute perfection. Paired with a cool, tangy remoulade sauce and crisp pickles on a buttery toasted bun, it delivers a burst of coastal seafood flavor that feels like a trip to a beachside diner. My kids cleared their plates in minutes and immediately asked when we could make them again!

Crispy Fried Oyster Sandwich

Prep Time: 15 mins | Cook Time: 10 mins | Servings: 4

Ingredients

  • For the Fried Oysters:
    • 1 pint fresh raw shucked oysters, drained
    • 1 cup yellow cornmeal
    • 1/2 cup all-purpose flour
    • 1 tsp Cajun seasoning
    • 1/2 tsp garlic powder
    • 1/2 tsp paprika
    • 1/2 tsp salt and black pepper
    • 1/2 cup buttermilk
    • Vegetable oil for frying
  • For Assembly:
    • 4 brioche or soft hamburger buns, buttered and toasted
    • 1/2 cup tartar sauce or Cajun remoulade
    • Dill pickle slices
    • Shredded lettuce (optional)

Instructions

  1. Prepare the Coating: In a shallow dish, whisk together the cornmeal, flour, Cajun seasoning, garlic powder, paprika, salt, and black pepper. Pour the buttermilk into a separate bowl.
  2. Bread the Oysters: Dip each drained oyster into the buttermilk, then dredge thoroughly in the seasoned cornmeal mixture, pressing lightly so the coating sticks.
  3. Fry to Golden Perfection: Heat 1 inch of oil in a heavy skillet to 375°F (190°C). Fry the oysters in small batches for 2 to 3 minutes, turning once, until golden brown and crispy. Drain on paper towels.
  4. Assemble the Sandwich: Spread a generous layer of tartar sauce or remoulade on both sides of the toasted buns. Layer the crispy fried oysters over the bottom bun, top with pickle slices, and close the sandwich to serve immediately.
