Ingredients

  • 1 cup cold milk
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1/2 cup mascarpone cheese or cream cheese, softened
  • 1 cup whipped topping (like Cool Whip)
  • 1/2 cup brewed coffee, cooled
  • 8 ladyfinger cookies or graham crackers, broken into pieces
  • Unsweetened cocoa powder, for dusting
  • Mini chocolate chips or grated chocolate (optional)

Instructions

Step 1: Make the Pudding Layer
  1. Whisk together cold milk and pudding mix in a bowl. Let set for 5 minutes.
  2. In another bowl, beat mascarpone cheese until smooth. Fold in pudding and whipped topping until creamy.
Step 2: Assemble the Cups
  1. Dip ladyfinger pieces quickly in coffee (don’t soak).
  2. Layer soaked cookies at the bottom of each cup, followed by pudding mixture.
  3. Repeat layers, finishing with a layer of pudding on top.
Step 3: Chill & Serve
  1. Refrigerate for at least 2 hours or until set.
  2. Dust with cocoa powder before serving. Top with chocolate chips if desired.
