Ingredients
- 1 cup cold milk
- 1 package (3.4 oz) instant vanilla pudding mix
- 1/2 cup mascarpone cheese or cream cheese, softened
- 1 cup whipped topping (like Cool Whip)
- 1/2 cup brewed coffee, cooled
- 8 ladyfinger cookies or graham crackers, broken into pieces
- Unsweetened cocoa powder, for dusting
- Mini chocolate chips or grated chocolate (optional)
Instructions
Step 1: Make the Pudding Layer
- Whisk together cold milk and pudding mix in a bowl. Let set for 5 minutes.
- In another bowl, beat mascarpone cheese until smooth. Fold in pudding and whipped topping until creamy.
Step 2: Assemble the Cups
- Dip ladyfinger pieces quickly in coffee (don’t soak).
- Layer soaked cookies at the bottom of each cup, followed by pudding mixture.
- Repeat layers, finishing with a layer of pudding on top.
Step 3: Chill & Serve
- Refrigerate for at least 2 hours or until set.
- Dust with cocoa powder before serving. Top with chocolate chips if desired.
