Ingredients:

• Baked pie crust
• Sugar
• Cornstarch
• Water
• Egg yolks
• Butter
• Fresh lemon juice & zest
• Egg whites
• Cream of tartar
• Extra sugar


Instructions:

  1. In a saucepan, whisk together sugar, cornstarch, and water. Cook until thickened.
  2. Slowly whisk in beaten egg yolks, then stir in butter, lemon juice, and zest.
  3. Pour the lemon filling into the baked crust.
  4. For the meringue, beat egg whites with cream of tartar until soft peaks form.
  5. Gradually add sugar and beat until stiff peaks form.
  6. Spread the meringue over the hot filling, sealing the edges.
  7. Bake at 350°F (175°C) until golden.
