Ingredients:

500g beef sirloin or flank steak, thinly sliced against the grain2 large onions, sliced into wedges3 cloves garlic, minced1 tablespoon fresh ginger, grated3 tablespoons soy sauce1 tablespoon oyster sauce1 tablespoon dark soy sauce1 tablespoon cornstarch1 teaspoon sugar1/2 teaspoon black pepper3 tablespoons vegetable oil2 tablespoons water or beef broth1 teaspoon sesame oil2 green onions, chopped (for garnish)

Directions:

In a bowl, combine sliced beef with soy sauce, oyster sauce, cornstarch, sugar, and black pepper. Mix well and let marinate for 15 minutes.Heat 2 tablespoons of oil in a wok or large skillet over high heat.Add the beef in a single layer and sear quickly for 1–2 minutes until browned.
