Banana Bread Cookies (Soft & Chewy)

Ingredients

  • 2 ripe bananas (mashed)
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chocolate chips or chopped walnuts (optional but amazing)

1. Prep oven

Preheat to 350°F (175°C) and line a baking sheet with parchment paper.

2. Cream base

Mix together:

  • butter
  • brown sugar
  • granulated sugar

Beat until smooth and fluffy.

3. Add wet ingredients

Mix in:

  • mashed bananas
  • egg
  • vanilla extract

4. Add dry ingredients

In a separate bowl, whisk:

  • flour
  • baking soda
  • baking powder
  • cinnamon
  • salt

Slowly mix into wet ingredients until just combined.

5. Fold in extras

Add chocolate chips or walnuts if using.

6. Bake

Drop spoonfuls onto baking sheet.

Bake for 10–12 minutes, until edges are lightly golden and centers look set.

7. Cool & enjoy

Let cool for 5–10 minutes—they firm up as they sit but stay soft and cake-like inside.
