Zucchini Patties (Better Than Meat!)

These crispy zucchini patties are packed with fresh vegetables, melted cheese, and simple seasonings. They’re perfect as a light lunch, healthy dinner, or tasty appetizer.

Ingredients

  • 2 medium zucchinis, grated
  • 1 medium carrot, grated
  • 1 cup shredded mozzarella cheese (or cheddar)
  • 2 large eggs
  • 3–4 tablespoons chopped green onions
  • 2 cloves garlic, minced (or ½ teaspoon garlic powder)
  • ½ cup all-purpose flour (or breadcrumbs)
  • ¼ cup grated Parmesan cheese (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • 2–3 tablespoons olive oil for frying

Instructions

  1. Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much liquid as possible.
  2. In a large bowl, combine the zucchini, grated carrot, mozzarella, Parmesan (if using), green onions, garlic, eggs, flour, salt, pepper, and paprika.
  3. Mix until everything is well combined. If the mixture is too wet, add a little more flour or breadcrumbs.
  4. Shape the mixture into small patties, about 2–3 inches wide.
  5. Heat the olive oil in a large skillet over medium heat.
  6. Fry the patties for 3–4 minutes per side, or until golden brown and cooked through.
  7. Transfer to a paper towel-lined plate to remove excess oil.
  8. Serve warm with sour cream, garlic yogurt sauce, ranch dressing, or your favorite dipping sauce.
