Zucchini Patties (Better Than Meat!)
These crispy zucchini patties are packed with fresh vegetables, melted cheese, and simple seasonings. They’re perfect as a light lunch, healthy dinner, or tasty appetizer.
Ingredients
- 2 medium zucchinis, grated
- 1 medium carrot, grated
- 1 cup shredded mozzarella cheese (or cheddar)
- 2 large eggs
- 3–4 tablespoons chopped green onions
- 2 cloves garlic, minced (or ½ teaspoon garlic powder)
- ½ cup all-purpose flour (or breadcrumbs)
- ¼ cup grated Parmesan cheese (optional)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika (optional)
- 2–3 tablespoons olive oil for frying
Instructions
- Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much liquid as possible.
- In a large bowl, combine the zucchini, grated carrot, mozzarella, Parmesan (if using), green onions, garlic, eggs, flour, salt, pepper, and paprika.
- Mix until everything is well combined. If the mixture is too wet, add a little more flour or breadcrumbs.
- Shape the mixture into small patties, about 2–3 inches wide.
- Heat the olive oil in a large skillet over medium heat.
- Fry the patties for 3–4 minutes per side, or until golden brown and cooked through.
- Transfer to a paper towel-lined plate to remove excess oil.
- Serve warm with sour cream, garlic yogurt sauce, ranch dressing, or your favorite dipping sauce.
