Ingredients

For the Meatloaf:

  • 2 lbs (900g) ground beef (80/20 lean-to-fat ratio works best)
  • 1 cup panko breadcrumbs (or plain breadcrumbs)
  • 1/2 cup milk
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp Italian seasoning

For the Sweet & Savory Meatloaf Glaze:

  • 1/2 cup ketchup
  • 1 tbsp brown sugar
  • 1 tbsp yellow mustard or Dijon mustard
  • 1 tsp Worcestershire sauce

For the Creamy Mashed Potatoes:

  • 2.5 lbs (1.1 kg) Yukon Gold or Russet potatoes, peeled and cubed
  • 1/2 cup unsalted butter, melted
  • 1/2 cup warm heavy cream or whole milk
  • 1/2 cup sour cream (optional, for extra creaminess)
  • 1 tsp garlic powder
  • Salt and black pepper to taste

For the Savory Brown Gravy:

  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups beef broth (warm)
  • 1/2 tsp onion powder
  • 1/2 tsp Worcestershire sauce
  • Salt and freshly ground black pepper to taste

Instructions

Step 1: Make the Meatloaf

  1. Preheat & Prep: Preheat your oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper or foil.
  2. Soak Breadcrumbs: In a small bowl, combine the breadcrumbs and milk. Let sit for 5 minutes (this keeps the meatloaf incredibly juicy!).
  3. Mix Ingredients: In a large bowl, combine the ground beef, soaked breadcrumbs, diced onion, minced garlic, eggs, Worcestershire sauce, salt, pepper, and Italian seasoning. Mix gently with your hands just until combined—do not overmix, or the meatloaf will become dense.
  4. Shape & Bake: Shape the mixture into a 9×5-inch loaf on your prepared baking pan.
  5. Add Glaze: Whisk together the ketchup, brown sugar, mustard, and Worcestershire sauce in a small bowl. Brush half of the glaze evenly over the top of the meatloaf.
  6. Bake: Bake in the oven for 45 minutes. Remove, spread the remaining glaze over the top, and return to the oven for another 15–20 minutes (internal temperature should reach 160°F / 71°C). Let it rest for 10 minutes before slicing.

Step 2: Prepare the Mashed Potatoes

  1. Boil Potatoes: Place cubed potatoes in a large pot, cover with cold salted water, and bring to a boil. Cook for 15–20 minutes until fork-tender. Drain well.
  2. Mash & Mix: Return potatoes to the pot. Add melted butter, warm heavy cream, sour cream, garlic powder, salt, and pepper. Mash with a potato masher or ricer until smooth, creamy, and fluffy. Keep warm.

Step 3: Make the Savory Brown Gravy

  1. Melt Butter: In a saucepan over medium heat, melt the 3 tablespoons of butter.
  2. Make the Roux: Whisk in the flour and cook for 1–2 minutes until golden brown and bubbly.
  3. Add Liquids: Gradually whisk in the warm beef broth, Worcestershire sauce, and onion powder.
  4. Simmer: Bring to a simmer and cook for 3–5 minutes, whisking constantly, until the gravy thickens to desired consistency. Season with salt and pepper to taste.
