Ingredients
- 340 g corned beef, shredded
- 800 g potatoes, peeled and chopped
- 150 g onion, finely chopped
- 200 ml milk
- 50 g unsalted butter
- 150 g mature cheddar cheese, grated
- 10 g salt
- 3 g black pepper
Instructions
Step 1: Prepare the Potatoes
Place the peeled and chopped potatoes into a large saucepan and cover with cold salted water. Bring to a boil over medium-high heat and cook for approximately 15–20 minutes, or until the potatoes are fork-tender. Drain thoroughly and return them to the pan. Add the milk and butter, then mash until smooth, creamy, and free of lumps. Season lightly with salt and set aside.
Step 2: Make the Filling
While the potatoes are cooking, heat a skillet over medium heat. Add the finely chopped onion and cook for 5–7 minutes until soft, translucent, and slightly golden. Stir in the shredded corned beef and cook for another 2–3 minutes, allowing the flavors to combine. Season with the salt and black pepper, stirring well.
Step 3: Assemble the Pie
Preheat your oven to 200°C (390°F). Spread half of the mashed potatoes evenly into a baking dish, creating a smooth base layer. Spoon the corned beef and onion mixture over the potatoes and spread it evenly. Sprinkle half of the grated cheddar cheese across the filling.
Carefully cover the filling with the remaining mashed potatoes, smoothing the surface with a spatula. Use a fork to create decorative ridges on top, which will help the pie develop a delicious crispy finish during baking.
Step 4: Bake
Scatter the remaining cheddar cheese evenly over the top of the pie. Place the dish in the preheated oven and bake for 25–30 minutes, or until the cheese is melted, golden brown, and bubbling around the edges.
Step 5: Serve
Remove the pie from the oven and allow it to rest for 5 minutes before slicing. This resting time helps the layers set and makes serving easier. Serve hot with steamed vegetables, a fresh green salad, or baked beans for a complete and satisfying meal.
Enjoy this comforting Corned Beef and Potato Pie with family and friends for a delicious homemade dinner that everyone will love! 🍽️🥔🧀
