Ingredients:

1 cup creamy peanut butter

1/4 cup unsalted butter (softened)

1 teaspoon vanilla extract

2 cups powdered sugar

2 cups semi-sweet chocolate chips

2 tablespoons shortening or coconut oil (optional, for smoother chocolate coating)

Directions:

Mix the Peanut Butter Filling:

In a mixing bowl, combine the peanut butter, softened butter, and vanilla extract until smooth and creamy. Gradually add the powdered sugar, mixing well until a soft dough forms that holds its shape.

Shape into Balls:

Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper. Freeze the peanut butter balls for 20–30 minutes to firm them up for dipping.

Melt the Chocolate:

In a microwave-safe bowl, melt the chocolate chips with the shortening or coconut oil (if using) in 30-second intervals, stirring after each interval, until the chocolate is smooth and glossy.

Dip and Coat:

Using a fork or toothpick, dip each frozen peanut butter ball into the melted chocolate, ensuring it’s fully coated. Let the excess chocolate drip off before placing the ball back onto the parchment-lined baking sheet.
