Lemon Garlic Butter Chicken with Creamy Parmesan Pasta
Ingredients
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons chopped fresh parsley
For the Creamy Parmesan Pasta:
- 8 oz fettuccine pasta
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- ¾ cup grated Parmesan cheese
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon Italian seasoning
- ¼ cup pasta cooking water (optional, to loosen sauce)
Instructions
1. Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the fettuccine according to package instructions until al dente.
- Reserve ¼ cup of pasta water, then drain and set aside.
2. Prepare the Chicken
- Season chicken breasts with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook about 5–6 minutes per side until golden and fully cooked.
- Remove chicken from the pan and slice into strips.
3. Make the Lemon Garlic Butter
- In the same pan, melt butter.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Stir in lemon juice and lemon zest.
- Return sliced chicken to the pan and toss to coat in the sauce.
4. Make the Creamy Parmesan Sauce
- In another pan, melt butter over medium heat.
- Add garlic and cook for 30 seconds.
- Pour in heavy cream and bring to a gentle simmer.
- Stir in Parmesan cheese, salt, pepper, and Italian seasoning.
- Add cooked pasta and toss until coated.
- If the sauce is too thick, add a little reserved pasta water.
5. Assemble the Dish
- Plate the creamy Parmesan pasta.
- Top with sliced lemon garlic butter chicken.
- Drizzle extra sauce from the pan over the chicken.
- Garnish with fresh parsley and extra Parmesan if desired.
