Long John Silver’s Fish Batter


Crispy Fried Fish

Ingredients:

  • 1 lb (500g) white fish fillets (cod, tilapia, haddock, or pollock)
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 cup cold water (or cold sparkling water for extra crispiness)
  • Vegetable oil, for frying
  • Lemon wedges (for serving)

Instructions:

  1. Prepare the Fish:
    Pat the fish fillets dry with paper towels. Cut into medium-sized pieces if needed.
  2. Make the Batter:
    In a large bowl, mix flour, cornstarch, baking powder, salt, pepper, paprika, and garlic powder.
    Slowly add cold water while whisking until you get a smooth batter (not too thick, not too thin).
  3. Heat the Oil:
    Heat vegetable oil in a deep pan or pot to 350°F (175°C).
  4. Coat the Fish:
    Dip each fish piece into the batter, making sure it is fully coated.
  5. Fry:
    Carefully place the battered fish into the hot oil.
    Fry for 4–6 minutes, turning occasionally, until golden brown and crispy.
  6. Drain:
    Remove and place on paper towels to drain excess oil.
  7. Serve:
    Serve hot with lemon wedges, tartar sauce, fries, or coleslaw.

Tips for Extra Crispiness:

  • Use very cold water or sparkling water.
  • Do not overcrowd the pan.
  • Fry in batches.
  • Serve immediately for best texture.
