Crispy Fried Fish
Ingredients:
- 1 lb (500g) white fish fillets (cod, tilapia, haddock, or pollock)
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 cup cold water (or cold sparkling water for extra crispiness)
- Vegetable oil, for frying
- Lemon wedges (for serving)
Instructions:
- Prepare the Fish:
Pat the fish fillets dry with paper towels. Cut into medium-sized pieces if needed. - Make the Batter:
In a large bowl, mix flour, cornstarch, baking powder, salt, pepper, paprika, and garlic powder.
Slowly add cold water while whisking until you get a smooth batter (not too thick, not too thin). - Heat the Oil:
Heat vegetable oil in a deep pan or pot to 350°F (175°C). - Coat the Fish:
Dip each fish piece into the batter, making sure it is fully coated. - Fry:
Carefully place the battered fish into the hot oil.
Fry for 4–6 minutes, turning occasionally, until golden brown and crispy. - Drain:
Remove and place on paper towels to drain excess oil. - Serve:
Serve hot with lemon wedges, tartar sauce, fries, or coleslaw.
Tips for Extra Crispiness:
- Use very cold water or sparkling water.
- Do not overcrowd the pan.
- Fry in batches.
- Serve immediately for best texture.
