Preparation
- In a bowl, combine the shredded beef with the chopped onion and cilantro. Season with salt and black pepper to taste.
- Heat a skillet or griddle over medium heat and lightly grease it with oil or butter.
- Warm the corn tortillas for a few seconds so they become flexible.
- Place one tortilla on the skillet. Add a layer of cheese, a generous spoonful of the beef mixture, and a little more cheese on top.
- Fold the tortilla in half and cook for 2–3 minutes per side, until golden and crispy with the cheese fully melted.
- Repeat with the remaining tortillas and filling.
- Serve hot with lemon halves and your favorite red or green salsa.
