Medium-Rice Steak with Asian Rice Noodles

Ingredients:
For the steak:

1 lb steak (ribeye, sirloin, or your choice of cut)
Salt and pepper to taste
1 tbsp olive oil
1 tbsp butter
2 cloves garlic, crushed
1 sprig fresh rosemary (optional)
For the Asian rice noodles:

8 oz rice noodles
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp sesame oil
1 tbsp rice vinegar
1 tbsp honey
1 tsp grated ginger
2 cloves garlic, minced
4 oz sliced ​​bell peppers (red, yellow, or green)
4 oz grated carrots
2 green onions, sliced
1 tbsp sesame seeds Sesame seeds (optional)
Fresh cilantro for garnish
Instructions:
Cooking the Steak:

Generously season the steak with salt and pepper on both sides.
Heat a skillet over medium-high heat. Add the olive oil and let it heat up.
Place the steak in the skillet and cook for about 3-4 minutes per side for medium rare (internal temperature of 54°C).
In the last minute of cooking, add the butter, crushed garlic, and rosemary (if using). Spoon the melted butter over the steak.
Remove from heat, cover loosely with aluminum foil, and let rest for 5-10 minutes before slicing.
Preparing the Asian Rice Noodles:

Cook the rice noodles according to the package instructions. Drain and set aside. In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, rice vinegar, honey, and grated ginger.
Heat a large skillet or wok over medium-high heat. Add a little oil, then stir-fry the minced garlic for about 1 minute until fragrant.
Add the bell peppers and carrots, then stir-fry until slightly softened (about 3 minutes).
Add the cooked rice noodles and prepared sauce. Stir-fry for another 2-3 minutes, until the noodles are well coated.
Serving:

Slice the steak across the grain into thin strips.
Serve the Asian rice noodles on a plate and arrange the steak slices on top. Garnish with sesame seeds and fresh cilantro.
