  • ~ 500 g puff pastry biscuits (store-bought or homemade)
  • Form with an 18 cm diameter, lined with cling film

Step 1: Prepare the Cream Filling

  1. Mix the eggs and sugars:
    • In a medium saucepan, whisk together 2 eggs100 g of sugar, and 10 g of vanilla sugar until well combined and slightly frothy.
  2. Add the dry ingredients:
    • Gradually add 4 tablespoons of flour and 2 tablespoons of starch to the egg mixture. Stir continuously to prevent lumps from forming.
  3. Incorporate the milk:
    • Slowly add 800 ml of milk to the mixture, stirring constantly until smooth.
  4. Cook the cream:
