Ingredients

For the Crust

6 cups Rice Krispies cereal

1/4 cup salted butter

1 (10 oz package) miniature marshmallowsFor the Filling

1 (8 oz package) cream cheese

1/2 cup sugar1 teaspoon vanilla extract

1 (7 oz jar) marshmallow creme

1 (8 oz container) Cool Whip, thawedFor Garnish (Optional)Whipped cream for pipingCubed or stacked Rice Krispies Treats (store-bought or homemade)

Instructions

Prepare the pan. Lightly grease a 9-inch or 10-inch springform pan with cooking spray. Set aside.Make the crust. Place the 6 cups of Rice Krispies cereal into a large mixing bowl.

In a medium saucepan over low heat, melt the salted butter and miniature marshmallows together, stirring constantly with a rubber spatula, until completely smooth and no lumps remain. Pour the melted marshmallow mixture over the cereal. Stir gently until every piece of cereal is evenly coated and the mixture looks sticky and uniform.Form the crust. Transfer the cereal mixture into the prepared springform pan. Using a greased flat-bottomed glass or measuring cup, press the mixture firmly into the bottom and about 1 inch up the sides to create a bowl shape. Work quickly while the mixture is still warm. Let the crust rest and set at room temperature for about 20 minutes.Start the filling.

In a large bowl with a hand mixer or in a stand mixer with the paddle attachment, beat the softened cream cheese, sugar, and vanilla extract on medium speed until completely smooth and creamy, about 1 minute. Scrape down the sides of the bowl as needed.

Add marshmallow flavor. Beat in the entire jar of marshmallow creme until fully incorporated and the mixture is glossy.Fold in the whipped topping. Remove the bowl from the mixer. Using a large rubber spatula, gently fold the thawed Cool Whip into the cream cheese mixture. Fold by cutting down through the center and sweeping around the edges until no white streaks remain.

Be careful not to overmix, or the filling will lose its airy texture.Assemble the cheesecake. Pour the filling into the set cereal crust. Smooth the top evenly with an offset spatula or the back of a spoon. If desired, pipe whipped cream around the outer edge and arrange cubed or stacked Rice Krispies Treats in the center for decoration.Chill to set. Refrigerate the cheesecake uncovered for at least 2 hours, or until the filling is firm enough to slice cleanly. Once fully set, gently release the springform collar. Serve cold.
