Scotcheroo Truffles❤️😋
Ingredients:
1 cup creamy peanut butter
1 cup powdered sugar, sifted
2 tablespoons unsalted butter, softened
1½ cups Rice Krispies cereal
1 cup semisweet chocolate chips
1 cup butterscotch chips (plus an additional ¼ cup for optional drizzling)
Instructions:
Prepare the Peanut Butter Mixture:
In a large mixing bowl, combine the creamy peanut butter, softened butter, and sifted powdered sugar. Mix until smooth and well combined.
Add the Cereal:
Gently fold in the Rice Krispies cereal, ensuring they are evenly coated with the peanut butter mixture. The mixture should be thick and hold together when pressed.
Form the Truffles:
Using a small cookie scoop or your hands, portion out the mixture and roll into 1-inch balls. Place them on a baking sheet lined with parchment or wax paper.
Chill the Truffles:
Transfer the baking sheet to the freezer and let the truffle balls chill for at least 1 hour. This will make them firm and easier to dip in chocolate.
Melt the Coatings:
In a microwave-safe bowl, combine the semisweet chocolate chips and butterscotch chips. Microwave in 30-second intervals, stirring between each, until fully melted and smooth. Be cautious not to overheat the mixture.
Dip the Truffles:
Remove the truffle balls from the freezer. Using a fork or a candy-dipping tool, dip each ball into the melted chocolate-butterscotch mixture, allowing any excess to drip off. Place the coated truffles back onto the parchment-lined baking sheet.
Optional Drizzle:
If desired, melt the additional ¼ cup of butterscotch chips and drizzle over the coated truffles for decoration.
Set the Coating:
Allow the truffles to sit at room temperature or place them in the refrigerator until the chocolate coating is fully set.
Serve and Store:
Once set, the Scotcheroo Truffles are ready to enjoy. Store any leftovers in an airtight container at room temperature or in the refrigerator for up to two weeks.
Tips:
Avoid Overheating Chocolate: When melting the chocolate and butterscotch chips, heat them slowly and stir frequently to prevent scorching.
Uniform Truffles: Using a cookie scoop can help ensure that all truffles are of uniform size, which aids in even coating and presentation.
Alternative Coatings: For variety, consider rolling the dipped truffles in crushed nuts, sprinkles, or shredded coconut before the coating sets.
