Ingredients:

2 lbs boneless skinless chicken thighs, cut into chunks
1 large onion, finely diced
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon olive oil
2 teaspoons garam masala
1 teaspoon curry powder
1 teaspoon paprika
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon salt
Β½ teaspoon black pepper
1 can (14 oz) crushed tomatoes
1 cup coconut milk
Β½ cup heavy cream
Β½ cup chopped sundried tomatoes
1 tablespoon tomato paste
1 tablespoon honey
2 cups cooked basmati rice
4 pieces garlic naan
Fresh cilantro for garnish

Directions:

Heat olive oil in a skillet over medium heat and sautΓ© the onion for 4-5 minutes until softened.
Add garlic and ginger and cook for 1 minute until fragrant.
Transfer the onion mixture to a slow cooker.
Add chicken, garam masala, curry powder, paprika, turmeric, cumin, salt, pepper, crushed tomatoes, tomato paste, coconut milk, and honey.
Stir well to combine all ingredients.
Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender and fully cooked.
Stir in the chopped sundried tomatoes and heavy cream during the final 20 minutes of cooking.
