Slow Cooker BBQ Beef Ribs with Caramelized Onions

Tender, juicy, fall-apart beef ribs slowly cooked in a rich, sweet, smoky BBQ sauce with caramelized onions. This is an easy, comforting meal with incredible flavor and very little hands-on preparation.

🛒 Ingredients

For the Beef Ribs

  • 4–5 pounds beef ribs
  • 2 large yellow onions, sliced
  • 5 cloves garlic, minced
  • 1 tablespoon olive oil

For the Dry Rub

  • 2 tablespoons brown sugar
  • 1½ tablespoons smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon cayenne pepper, optional

For the BBQ Sauce

  • 1½ cups BBQ sauce
  • ½ cup beef broth
  • ¼ cup ketchup
  • ¼ cup brown sugar
  • 3 tablespoons honey
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder

👩‍🍳 Instructions

1. Prepare the Beef

Pat the beef ribs dry with paper towels.

If there is a thick layer of fat on the ribs, trim off some of the excess while leaving enough fat for flavor and moisture.

2. Season the Ribs

In a small bowl, combine the brown sugar, smoked paprika, garlic powder, onion powder, salt, black pepper, chili powder, cumin, and cayenne pepper.

Rub the seasoning generously over every side of the beef ribs.

For even more flavor, let the seasoned ribs rest for 20–30 minutes before cooking.

3. Prepare the Slow Cooker

Place the sliced onions across the bottom of the slow cooker.

Add the minced garlic over the onions.

The onions will slowly caramelize underneath the beef and absorb all the delicious juices.

4. Make the BBQ Sauce

In a bowl, whisk together:

  • BBQ sauce
  • Beef broth
  • Ketchup
  • Brown sugar
  • Honey
  • Worcestershire sauce
  • Apple cider vinegar
  • Dijon mustard
  • Smoked paprika
  • Garlic powder

Mix until smooth.

5. Add the Beef

Place the seasoned beef ribs on top of the onions.

Pour the BBQ sauce mixture over the ribs, making sure they are well coated.

Cover the slow cooker with the lid.

6. Slow Cook

Cook on:

LOW for 7–8 hours

or

HIGH for 4–5 hours

For the most tender and juicy beef, LOW is highly recommended.

The ribs should become extremely tender and easy to pull apart with a fork.

7. Make the Ribs Extra Sticky

Once the ribs are tender, carefully remove them from the slow cooker.

Place them on a baking sheet lined with foil.

Brush generously with additional BBQ sauce.

Broil for approximately 2–4 minutes, watching closely, until the sauce becomes glossy, sticky, and slightly caramelized.

8. Finish the Dish

Return the ribs to the slow cooker or serving dish.

Spoon the caramelized onions and thick BBQ juices over the top.

Let the ribs rest for about 5 minutes before serving.
