Southern Smothered Potatoes

Southern Smothered Potatoes ❤️😋

Ingredients
4 large russet potatoes, peeled and sliced into ¼-inch rounds
1 medium onion, sliced
1 green bell pepper, sliced (optional)
3 tablespoons bacon grease or vegetable oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon onion powder
¼ cup water or chicken broth

Instructions
Heat bacon grease or oil in a large cast-iron skillet over medium heat.
Add sliced potatoes, onions, and bell peppers. Sprinkle with salt, pepper, garlic powder, paprika, and onion powder.
Cook uncovered for 5–7 minutes until the bottom layer starts to brown.
Gently flip the potatoes, then pour in the water or broth.
Cover the skillet and reduce heat to low. Let the potatoes smother and steam for 15–20 minutes, stirring occasionally, until soft and golden.
Remove lid for the last few minutes to let them brown slightly.
Serve warm as a classic Southern side.
