An employee I worked with brought this recipe in one day and I fell in love with it. I’m not a big fan of spinach and hesitated but I loved these bars. I’ve been making this for about 13 years now and it still gets raves when I serve them or bring them to someone. Please enjoy.

Ingredients1 package frozen chopped spinach, thawed and squeeze out excess water (12 oz)1 cup milk1 cup all-purpose flour1 teaspoon baking powder1 teaspoon salt1 stick butter, softened1 pound Monterey jack cheese, cubed2 large eggsHow To Make spinach cheese barsEggs and softened butter in a bowl.
Step 1
Preheat oven to 350 degrees. Beat together the softened butter and eggs.Milk, flour, baking powder, and salt added to the eggs.
Step 2
Mix in milk, flour, baking powder, and salt.Folding in spinach and cheese.
Step 3
Fold in spinach and cheese.Spinach mixture poured into a baking dish.
Step 4
Spread in a 9×13″ pan sprayed with cooking spray.Baking the spinach cheese bars.

Bake in preheated oven for 40-45 minutes. Once baked, cut into small squares to serve. Can be eaten cold.
