Sweet Potato Pie

Ingredients:
2 medium sweet potatoes
1 unbaked 9-inch pie crust
1/2 cup butter, melted
3/4 cup brown sugar
1/2 cup granulated sugar
2 eggs
1/2 cup evaporated milk
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/4 teaspoon salt

Instructions:
Preheat the oven to 350°F (175°C).

Peel and boil the sweet potatoes until tender, then mash until smooth.

In a large bowl, combine the mashed sweet potatoes, melted butter, brown sugar, granulated sugar, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until smooth and creamy.

Pour the filling into the unbaked pie crust and spread evenly.

Bake for 50–60 minutes until the center is set and a knife inserted near the center comes out clean.

Remove from the oven and let the pie cool completely before slicing.

Serve plain or topped with whipped cream.
