This Classic Egg Salad Sandwich is creamy, flavorful, and incredibly easy to make. Ingredients

For the Egg Salad

  • 8 large eggs
  • 1/3 cup mayonnaise
  • 1 tablespoon Dijon mustard (or yellow mustard)
  • 1 teaspoon lemon juice
  • 1 celery stalk, finely diced
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon chopped fresh chives or parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste

For the Sandwiches

  • 8 slices soft white or whole wheat bread
  • Butter (optional)
  • Lettuce leaves (optional)
  • Tomato slices (optional)

Instructions

  1. Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat.
  2. Once the water reaches a boil, cover the pan, remove it from the heat, and let the eggs sit for 10–12 minutes.
  3. Transfer the eggs to a bowl of ice water for 5 minutes, then peel and chop them into small pieces.
  4. In a large bowl, combine the chopped eggs, mayonnaise, Dijon mustard, lemon juice, celery, onion, chives, garlic powder, paprika, salt, and pepper.
  5. Gently stir until everything is evenly coated. Taste and adjust the seasoning if needed.
  6. If desired, lightly butter the bread slices.
  7. Spread a generous amount of egg salad onto four slices of bread.
  8. Add lettuce and tomato slices if using.
  9. Top with the remaining bread slices and gently press together.
  10. Slice each sandwich in half and serve immediately.

Tips

  • For extra flavor, add 1–2 teaspoons of sweet pickle relish.
  • A pinch of cayenne pepper or a few drops of hot sauce adds a little heat.
