Ingredients
For the Egg Salad
- 8 large eggs
- 1/3 cup mayonnaise

- 1 celery stalk, finely diced
- 2 tablespoons finely chopped red onion
- 1 tablespoon chopped fresh chives or parsley
- 1/2 teaspoon garlic powder

For the Sandwiches
- 8 slices soft white or whole wheat bread
- Butter (optional)
- Lettuce leaves (optional)
- Tomato slices (optional)
Instructions
- Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat.
- Once the water reaches a boil, cover the pan, remove it from the heat, and let the eggs sit for 10–12 minutes.
- Transfer the eggs to a bowl of ice water for 5 minutes, then peel and chop them into small pieces.
- In a large bowl, combine the chopped eggs, mayonnaise, Dijon mustard, lemon juice, celery, onion, chives, garlic powder, paprika, salt, and pepper.
- Gently stir until everything is evenly coated. Taste and adjust the seasoning if needed.
- If desired, lightly butter the bread slices.
- Spread a generous amount of egg salad onto four slices of bread.
- Add lettuce and tomato slices if using.
- Top with the remaining bread slices and gently press together.
