Ingredients
For the Filling
- 2 cups cooked chicken breast or rotisserie chicken, shredded or diced
- 2 tablespoons unsalted butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 cup frozen peas
- 1/3 cup all-purpose flour
- 2 cups chicken broth
- 1 cup whole milk or heavy cream
- 1 teaspoon salt

For the Crust
- 2 refrigerated pie crusts or homemade pie dough

Instructions
- Preheat the oven to 400°F (200°C).
- Melt the butter in a large skillet over medium heat. Add the onion, carrots, and celery. Cook for about 6–8 minutes until softened.
- Stir in the garlic and cook for 30 seconds.
- Sprinkle the flour over the vegetables and stir constantly for 1 minute.
- Slowly whisk in the chicken broth, then add the milk. Continue stirring until the sauce becomes thick and creamy, about 5 minutes.
