Coca-Cola Cake

Coca-Cola Cake

Coca-Cola Cake is the kind of dessert that brings pure Southern nostalgia to the table — moist, fudgy, bubbly with sweetness, and full of that old-time magic only Coke can give. It tastes like church potlucks, family reunions, and those joyful moments when someone walks in carrying a warm cake covered in chocolate frosting. One bite feels like a memory you never want to let go of.

Ingredients
For the cake:
2 cups all-purpose flour
2 cups granulated sugar
1 cup Coca-Cola (not diet)
1 cup unsalted butter
1/4 cup unsweetened cocoa powder
1/2 cup buttermilk
2 large eggs
1 teaspoon baking soda
1 teaspoon vanilla extract
1/2 teaspoon salt

For the frosting:
1/2 cup unsalted butter
1/4 cup unsweetened cocoa powder
1/2 cup Coca-Cola
4 cups powdered sugar
1 teaspoon vanilla extract
1 cup chopped pecans (optional)

Instructions
Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
In a large bowl, whisk together flour and sugar.
In a saucepan, combine Coca-Cola, butter, and cocoa powder. Bring to a boil, then pour the hot mixture over the flour and sugar. Whisk until smooth.
Stir in buttermilk, eggs, baking soda, vanilla, and salt until combined.
Pour batter into the baking dish and bake for 35–40 minutes, or until a toothpick comes out clean.

For the frosting, combine butter, cocoa, and Coca-Cola in a saucepan. Bring to a boil, then remove from heat.
Whisk in powdered sugar and vanilla until smooth.
Stir in pecans if using.
Pour the warm frosting over the warm cake so it soaks in beautifully.
Let cool slightly before serving — or enjoy warm for the richest flavor.
