Ingredients
For the Mashed Potatoes
- 2 pounds russet potatoes, peeled and cubed
- 4 tablespoons butter
- ½ cup whole milk
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
For the Beef and Gravy
- 1 pound ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 packet brown gravy mix
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- ½ teaspoon onion powder
- ½ teaspoon black pepper
- 1 tablespoon cornstarch (optional, for thicker gravy)
- 2 tablespoons water
For the Toppings
- 2 cups sweet corn (canned, frozen, or fresh)
- 1½ cups shredded cheddar cheese
- Fresh parsley, chopped (optional)
Instructions
Step 1: Prepare the Mashed Potatoes
Place the cubed potatoes into a large pot and cover with cold water. Add a generous pinch of salt and bring to a boil over medium-high heat. Cook for 15–20 minutes, or until the potatoes are fork-tender. Drain thoroughly and return them to the pot.
Add the butter, milk, garlic powder, salt, and pepper. Mash until smooth and creamy. If needed, add a little more milk for your preferred consistency. Cover and keep warm.
Step 2: Cook the Ground Beef
While the potatoes are cooking, heat a large skillet over medium heat. Add the ground beef and diced onion. Cook for 6–8 minutes, breaking the meat apart with a spoon until browned and fully cooked. Drain excess grease if necessary.
Add the minced garlic and cook for another minute until fragrant.
Step 3: Make the Brown Gravy
Pour the beef broth into the skillet with the beef mixture. Whisk in the brown gravy mix, Worcestershire sauce, onion powder, and black pepper. Bring the mixture to a gentle simmer.
Cook for 5–7 minutes, stirring occasionally, until the gravy thickens. For an even richer gravy, mix the cornstarch with water and stir it into the skillet. Simmer for 2 more minutes until thick and glossy.
Step 4: Heat the Corn
Warm the sweet corn in a small saucepan over medium heat for 3–4 minutes. Drain if necessary and set aside.
Step 5: Assemble the Bowls
Divide the mashed potatoes among serving bowls. Create a shallow well in the center and spoon a generous amount of sweet corn over the potatoes. Top with the savory beef and brown gravy mixture.
Sprinkle the shredded cheddar cheese over the hot beef so it begins to melt immediately. For extra melted cheese, place the bowls under a broiler for 1–2 minutes.
Step 6: Serve
Garnish with chopped parsley if desired and serve immediately while hot.
