Slow-Cooker Beef & Potato Stew

This is pure comfort food in a bowl. Tender chunks of beef, buttery little potatoes, onion, garlic, and herbs slowly cook in a rich savory gravy until everything is fall-apart tender and full of flavor. Perfect for a cozy family dinner! 😍

Ingredients:

  • 2 lbs beef stew meat, cut into chunks
  • 1½ lbs baby yellow potatoes
  • 3 cups beef broth
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
  • 3 tbsp unsalted butter
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh parsley, chopped

Directions:
Add the beef, baby potatoes, onion, garlic, thyme, paprika, salt, and black pepper to the slow cooker.

Place the butter on top, then pour in the beef broth.

Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is tender and the potatoes are cooked through.

For a thicker gravy, remove a little cooking liquid near the end, whisk it with a small amount of cornstarch, then stir it back into the slow cooker and cook for another 10–15 minutes.

Spoon the hot beef and potatoes into bowls and finish with fresh parsley and a little extra black pepper.

Warm, hearty, and exactly the kind of dinner you want waiting for you at the end of the day. 🥰
